The Food Diaries, Part 5: Spicy Thai Vegetable and Tofu meal (for 2.5 POINTS!)

I just created this meal this week and am eating it again now, for the second time. I am still in awe of my genius-

Ingredients (all are zero points and all are core, except where noted):
  • Red Onion, 1/2, chopped
  • White Onion, 1/2, chopped
  • Red Pepper, 1/2, chopped
  • Jalapeno Peppers, 2, chopped
  • Green Peas, frozen, 1/2 cup
  • Fresh Basil, handful, chopped
  • Lite Firm Tofu, Nasoya 7 oz {core or 1.5 points}
  • Green Curry Paste, 1/2 of 4oz can {non-core. 1 point on both programs}*
  • Tofu Shiritaki Noodles, 8 oz package {non-core, but 0 points}
*Note: You should be able to pick up cans of curry paste at your local Asian grocery store. Be warned: 2 oz of green curry paste is unbelievably spicy. I have a very high tolerance for spicy food. You will likely need much, much less. Start with 1 tsp and work up from there depending how spicy you like it. Also- if you use 1 oz or less, it will be zero points.

Here are the ingredients:


Basically, I just chop up the veggies while the pan is pre-heating. (My, what a gorgeous pink knife that is!)



I throw the vegetables in, and then the tofu, and stir them for a bit. Then I throw in the noodles and let them stir and cook some more.

Look how much freaking food this is:


That entire meal is 2.5 points on flex or 1 point on core (that's only if you use as much curry paste as I do)

Other variations of this meal off the top of my head:
You can leave out the tofu noodles if you don't like them and eat this alone OR with a cup of rice (4 points for white, 3 for brown)
You can simmer the veggies in some light coconut milk (1/4 cup= 1 point)
You can experiment with different currys- try red or massaman (points will vary accordingly)
You can add peanuts to the final product (10 for 1 point)

Basically, just throw stuff together and have fun with it!

  3. Wow, this looks fantastic, I'm going to try it this week. I love spicy food and Mike is a complete firehead. I love finding recipes that are very healthy and very flavorful. Thanks for posting!!
