Recipe: Vegan Chorizo Burrito

As promised, here is a simple recipe I threw together using my absolute favorite vegan product: Field Meat Grains Sausages, Mexican Chorizo.

Ingredients (for 2 servings):
  • Olive Oil, 2 tsp
  • Frozen Peas, 1 cup
  • Frozen Yellow Corn, 1/2 cup
  • Onions, 1/2, diced (not pictured because I didn't have any onion the night I made this)
  • Shallots, 2, sliced
  • Red Pepper, 1/2 diced
  • Green Pepper, 1/2 diced
  • Garlic Cloves, 2
  • Spinach, a big bunch
  • Field Grains Vegan Chorizo, 1 link
  • Tortillas, 2
  • Cilantro, handful, chopped
  • Vegan Sour Cream, 2 tbsp
  • Salt




While the cast iron skillet was getting hot, I chopped most of my vegetables and measured the frozen ones-



I added the olive oil to the skillet, then added the frozen vegetables, which I ran under warm water first so I wouldn't get all the extra water from the defrosted ice. (Note: I really don't think it matters what order you add the ingredients. My general rule is that I add them in the order of what takes longest to cook to what takes the least long to cook.)



After about 2 minutes, I added the peppers and shallots-



I chopped one link of soyrizo-



And added the soyrizo to the mixture, continuing to stir-



After another few minutes I added the spinach and garlic-



After the spinach wilted (and since I didn't have tomatoes or onions), I added the can of salsa-



I chopped the cilantro to top the burrito after I assemble it, and noticed the Professor was watching me again-



As it continued to cook, I put the tortilla on top so it would get soft from the warm steam (Note: this is not the same tortilla pictured above. Those were moldy so I ended up using these larger whole wheat ones)-



When it looked about done, I divided the mixture in half-



I had my burrito toppings ready-



I placed the mixture into the burrito, along with the vegan sour cream, cilantro, Tabasco and salt-



I'm not very good at wrapping burritos, so I have no photo of that. But you get the idea.

As shown here, this is 6.5 points (2.5 for the half a sausage link, 1 for the olive oil, 2 for the tortilla, 1 for the sour cream). Of course depending on the tortilla you use or the toppings you select, your points can vary.

  9. That looks amazing! I am seriously considering going Vegan although I love cheese and cottage cheese. I have removed almost all meat from my diet, so that a start! Love your blog and your pics :)
