It's not a lie. This meal can be made for ZERO points using the following ingredients:
Ingredients:
White Onion, chopped
Red Pepper, chopped
Frozen Green peas (1/2 cup)
Japapeno Pepper, chopped
Garlic cloves, minced
Brussels Sprouts, quartered
Spinach
Tomato, chopped
Tofu Shirataki Noodles, 8 oz package
Tomato Sauce (8 oz)
Basil, chopped
Red Pepper Flakes
Parmesan Cheese (1 tsp)
spinach & tofu shirataki noodles:
Entire can of tomato sauce (15 oz) = 1 point
Shredded fat-free Mozzarella (1/3 cup) = 1 point
Cooked in Tsp Olive Oil = 1 point
Replace tofu shirataki noodles with 1 cup whole wheat macaroni = 3 points
To cook:
I use some non stick spray and put the onions, peas, peppers, tomatoes, brussels sprouts, and garlic in the pan-
Then add the spinach-
And then the noodles-
I just sort of stir it for a while. It takes less than 10 minutes to cook. When it's done, I put half the can of tomato sauce in a bowl and spoon out half the mixture into the bowl. I top it with the red pepper flakes, Parmesan cheese and basil (and shredded mozzarella if I decide to use it). And then mix it up to distribute the tomato sauce.
This makes 2 full bowls of food - and was my dinner tonight for only one point (because I used the whole can of tomato sauce)
So many servings of vegetables and totally delicious! And did I mention it was only 1 point?

ReplyDeleteWow. This sounds delicious. Have you ever tried spaghetti squash? I love making Italian dishes with it instead of pasta. Although those noodles sound ten times better. I must try.

It's been recommended to me numerous times- it just seems like such a pain in the ass (not to mention messy) to dissect the spaghetti squash. But I really should try it.

ReplyDeleteI just joined today! I can already see how going to the meetings really helps. It was amazing to see all the people in my meeting and what they have achieved. I see how it truly is a lifestyle change, although it does'nt seem like a bad one. Last year I went on a Gluten free diet after being diagnosed with celiac disease, and lost weight right away. Then gained it back plus some from GF baked goods. You look awesome and have super inspiring! I only wish I got my act together sooner.

Where can you get those noodles? I'd love to try them but I can't seem to find them where I've been going.
ReplyDeleteMichelle, most Whole Foods carry them. I also find them in organic type grocery stores and some mainstream grocery stores. They are in the section with the vegetarian stuff in the produce aisle (the veggie hot dogs/cheese/etc). Also, check out their site (I linked it above).
